This word “caviar” is Persian meaning “fish producer of eggs.” While “caviar” is loosely associated with the roe of other fish such as trout and salmon (red caviar), true caviar comes from sturgeon.

Caviar Qualities

Caviar is graded based on size and color. Farmed caviar pearls range in colour from honey to dark grey.

The name "black" caviar does not always relate to its real colour. The best caviar emits a fresh ocean scent, with shiny grains identical in size that do not stick together. Imitation caviars retain a strong fishy scent.

Fine Caviar Crafting

Crafting fine caviar is complex and challenging. Expert caviar makers take many years to apprentice. Roe are selected, refined and matured much as grapes are transformed into vintages wine. When prepared with great care, the quality of farmed and wild caviar is indistinguishable. Caviar Dining Suggestions

Avoid using silver utensils, which alter the taste, or adding spices or herbs. Match with toast, blini, potatoes or a touch of crème fraiche but nothing else that will mask the pure experience.
